Ingredients
Instructions
Remove giblets and pat turkey completely dry, inside and out.
Preheat oven to 325°F. Season cavity with salt, stuff with lemon, onion, and garlic.
Loosen skin and rub butter under and over the skin. Season with salt, pepper, and herbs.
Roast 13 minutes per pound, basting every 45 minutes.
Simmer giblets in 2 cups broth for 1 hour. Strain and reserve broth.
Once turkey rests, use pan drippings to make gravy: whisk in flour, add remaining and giblet broth, cook until thickened.
Let turkey rest 30 minutes before carving. The juices redistribute — don't skip this.

Recommended Tools & Appliances
Roasting Pan with Rack
Elevating the turkey on a rack allows for even heat circulation and ensures the bottom of the turkey does not steam in its own juices, resulting in crispier skin.
Meat Thermometer
Using a probe thermometer is essential to monitor the internal temperature accurately so the turkey reaches food-safe levels without drying out.
Vitamix Professional Series 750
Vitamix
This is perfect for quickly smoothing out the giblet gravy directly in the pan to ensure a lump-free, silky consistency without transferring hot liquids.
Basting Brush
A high-quality brush helps distribute the seasoned butter mixture evenly across the skin and into crevices to encourage uniform browning and flavor.
Saucepan
A heavy-bottomed saucepan is ideal for whisking the flour and turkey drippings together to create a rich, thickened gravy on the stovetop.
